Zucchini

Also known as courgette, this versatile summer squash is fresh, easy to prepare, and perfect for quick meals!

Zucchini flowers are just as edible as the vegetable itself! They can be picked gently and stuffed with ricotta, for example. Absolutely delicious!

How can you use it in the kitchen?

Unlike winter squash, zucchini has thin, tender skin that doesn’t need to be peeled. It can be enjoyed both raw and cooked.

Raw, it’s perfect with dips on a veggie platter, or sliced into thin ribbons or spirals to make refreshing vegetable “noodles” and crunchy salads.

Cooked, zucchini can be quickly sautéed in a little olive oil, grilled on the barbecue, or added to ratatouille, stir-fries, quiches, and lasagna. Cut it in half lengthwise and stuff it. 

Grate your zucchini and mix it into cake, muffin, or quick bread batter: its tender flesh adds incredible moisture without changing the flavour!
